Mannitol is a six-carbon polyol extracted from brown algae cells and has two configurations, D and L. The L configuration is a synthetic product and does not exist in nature. The D configuration is widely distributed in the plant kingdom. In particular, the marine brown algae of the kelp family have a high content, mannitol is a storage substance in brown algae cells, and large brown algae such as kelp are the main raw materials for the extraction of mannitol.
There are two kinds of mannitol in industrial production: one is natural mannitol extracted from kelp as raw material, and the other is synthetic mannitol processed from sucrose and glucose.
Mannitol is an isomer of sorbitol. Its molecular formula and molecular mass are the same as those of sorbitol. Sorbitol is highly hygroscopic, but mannitol has no hygroscopicity at all. Mannitol is 70% sweeter than sucrose.
Mannitol is mainly used in medicine and food, and can be used as food additive, sugar-free sweet food, and feed additive.

1. FOOD
Mannitol is a polyol (polyol) produced by the hydrogenation of fructose and is used as a sweetener, humectant and bulking agent. Low hygroscopicity and poor oil resistance. It has 1.6 kcal/g. Its Chemicalbook is about 22% water-soluble and about 72% sweeter than sugar, with a cool sweetness. It acts as a dusting agent along with the starch in the gum. It is used in sugar-free candy, chewing gum, cereal and mints.
Mannitol is one of the commonly used sugar alcohol substitutes and is often used in sugar-free chewing gum ingredients. Mannitol is the least hygroscopic sugar alcohol and can be used in food release powders.

3. Chemicals
Mannitol is esterified and etherified to form various resins and surfactants. Mannitol ester can be used as polyvinyl chloride plasticizer; Polyurethane rigid foamcan be used for thermal insulation, sound insulation and moisture-proof materials.
